Crockpot Time!

Its been a long time i never used our crockpot. I missed cooking dinner through crockpot, its easier and no hassle. You can prepare in the morning and you can have a good tasty food for dinner. Yesterday, i bought a chuck roast and vegetables in can like carrots and beans. Then i decided to cook pot roast. I make an easy recipe. First i cut onions and put in a crock pot, i put the pot roast on the top of it. I seasoned with salt and pepper and add beef brooth. I let it cook for about 8 hours on low. I add the carrots and french style beans when its already almost 6 hours and let it cook for more than 2 hours. So the cooking takes approximately 7-8 hours on low. It smells good and its tasty too! Why not try it on your home and see how easy it is :-)

Prepare in Advance...

Well, tonight I need to get ready for all the things I will going to prepare for tomorrow. Because I invite my Filipina friend to come over here in the house to have dinner with us. I will going to cook Filipino food like Pancit and Lumpia (egg roll). Most of my friends here like my egg roll and im really happy that Im really improving in my cooking. I prepare the ingredients of my lumpia and put it in a bowl, then tomorrow morning I will start to wrap it and dip fry in the afternoon. Anyway, hope everything will fine tomorrow and will see what happen. Hope they will like the food! Hehe…

Lumpia (spring roll)

I cooked lumpia (spring roll) for our dinner tonight and i give the rest for the 2 brothers who bible study with Mike. Im glad they like it, my lumpia turns out really good today and we still have more left over for tomorrow. I create my own recipe for lumpia and i was thinking to share it here and maybe you can try it to your home too!

Lumpia (Spring Roll)

Ingredients:
Ground beef
onions
carrots
cabbage
spices (salt, pepper to taste)
1 egg
spring roll wrapper
oil

Directions:
Put the ground beef in a bowl, mix with onions, carrots, cabbage (cut into small pieces) salt and pepper, egg and mix with your hand. You can also add snap peas if you want (i didn't put snap peas at this time because i dont have time to go to the store). Wrap it at spring roll wrapper and dip fry with oil. Serve hot and crispy.

Lumpia and Adobo...

Its been a long time i never make lumpia and adobo. I missed my lumpia and adobo a lot. So yesterday i decided to make lumpia and adobo for our dinner. Mike loves my adobo and lumpia as well my mother-in-law so im glad i did it. I am not a good cook but it really turns out good. I missed the cooking of my brother-in-law in the Philippines and also my sister. They are both really good in the kitchen. They make good lumpia and adobo and im trying to imitate them hehe :-) I still have left over for my lumpia and adobo yesterday so i will eat that tonight :-) Wanna have some? lolz :-)

Choco-Peanut Butter Crunch Bars


Here is the other recipe that i tried yesterday. I thought it will never turn out good because when i mix all the ingredients, it doesn't look good hehe, its pluffy and messy. But when it started to cook, it turns out the one on the picture on my recipe book so im happy with it. Here is the recipe:

Ingredients:
1 cup butter, softened
1 cup granulated sugar
1 cup brown sugar
4 cups quick-cooking rolled oats
1 cup semi sweet chocolate
3/4 cup creamy peanut butter
chopped peanuts (optional)

1. Preheat oven 350 degrees. In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar and brown sugar, beat until fluppy. Stir in rolled oats.
2. Press mixture into the bottom of an ungreased baking pan. Bake about 15 mins or until the endges start to brown.

3. In a medium saucepan, cook and stir the semi sweet chocolate and peanut butter until melted and smooth. Spread chocolate mixture over baked crust. Sprinkle with peanuts if desired. Cook in pan on a wire rack until chocolate mixture is set. Cut into bars.

Pizza by the yard recipe...


This is our dinner yesterday. I was in mood to cook so i am having fun to try the new recipe of the Pizza by the Yard. Hope you will like it! because my husband and son like it a lot. Try this at home and its really easy. Enjoy!

Ingredients:
French Bread
1 lb ground beef
tomato paste
onions
ripe olives
1/4 cup of water
salt and pepper to taste
1/2 tsp. dried oregano
Parmesan cheese
tomatoes, sliced
green sweet peppers (cut into rings)
American Cheese

1. Cut the bread horizontally. Broil 4 inches from the heat about 1 min or until lightly toasted. Transfer bread to a large baking sheet and set aside.

2. Set the oven to 350 degrees. Cook the ground beef in a large skillet until brown. Drain the fat. Stir in tomato paste, onions, olives, water, oregano, salt and pepper. Cook and stir over medium heat until heated through. Remove from heat and stir in Parmesan cheese.

3. Top bread with meat mixture. Top with tomato slices, sweet pepper rings and american cheese. Bake for 8-10 mins or until cheese is melted.

Look what i've got!


This afternoon after lunch, i went to the filipino food store together with Dustin. I already had my driver license so this is my chance to go at the store without mike. I am happy to find everything that i like from corned beef, dried fish, pancit canton, fish, tocino, longganisa and frozen fish from Philippines. Not only that i got polvoron, sky flakes, otap, oishi crackers snack, arrozcaldo in a cup and a lot more. I payed about $70 for everything. It was kind a expensive but its worth it. I missed all filipino food and i cant wait to go back to the Phillippines again. I dont know when but maybe after 2-3 years from now. :-)

Beef Soup for lunch?

I really missed Philippine Beef Soup. So I decided to cook beef soup for lunch today. But, I don’t have enough ingredients. I called mike and told him that maybe I can go to the store with Dustin to buy the things I need for my beef soup. I don’t drive yet because I don’t have driver license, so Dustin and I walk to the store at city market, few blocks away from the house. I bring the stroller with us so that its not hard for Dustin to walk, when he get tired then he can ride the stroller. I got the things I need but I was confused how to start. Well, anyway I do my own way, I put the onions and garlic with water. When its boiling, I add the salt and pepper to taste and add the beef ribs. After few minutes I added tomatoes and potatoes. When its almost done I add the Chinese cabbage and add fish sauce. It turns out good though hehe. Its been a long time I never cook beef soup but im glad It turns out okay, so I have beef soup for my lunch!

Im craving corned beef and pancit canton from Pinas!


Yah this morning when i feel hungry, im craving for the food which we dont have here in Colorado. I am craving for corned beef, pancit canton and mango from Pinas! I ask mike if its possible to tell my parents from Pinas that maybe they can send me corned beef, pancit canton and mango via FedEx but Mike says maybe its too expensive. He ask me if Asian store here have corned beef and pancit canton but i think they dont have. Oh i remember we have a Filipino store here that we never visit it yet, he told me maybe i can give them a call and ask if they have corned beef, pancit canton and Philippine mango. Maybe this week we will try to visit the filipino store and see what they got. Its so hard to be pregnant especially if you craving something that you dont have. Ohhh too bad... wait i can eat some corned beef but i dont like hash corned beef here, it taste different than filipino corned beef hehe :-)

My friends are visiting us!


All my longtime friends visit me in the house and it was nice to see them all. I missed them of course, its been a long time I never seen them but im glad they come over to the house to see us.
Dustin having fun, he always love to see the movie Cars and he is so quiet when he is watching that movie. He is just sitting down in front of the TV and being a good boy. He even don’t take any toys from other kids, he is waiting for his turn. So Mike and I decided to buy him toys so that he can play with himself and with Reynen too. He don’t like Reynen a lot, Reynen is a son of my cousin but my mom is the one who taking care of that little boy. But they become friends after.


We taking lot of pictures with them and its nice because they are having dinner with us. My brother-in-law cooked a good dinner for us and they buy also mango and pineapple for dessert.

His first baby food...

When Dustin is about 3-4 months old im starting giving him baby cereal. First he don’t like it but the more im giving him apple sauce and some baby cereal he starting to get used to it. It is fun to watch them eating. After I feed him cereal I nursed him and put him into his basset so that he can sleep. Their is no day that I never play with him. I put him on his aquarium swing while im doing my stuff in the house like cleaning and cooking, he likes to be in that swing, grandma gave that swing as a gift for Dustin. Everytime I put him in the swing, you can see right away how happy he is because he is laughing and enjoying every time he hears the music and see those colorful light. Its kind a new to them, he tried to reach the colorful light too. I always read him book every night also before he go to bed. So feeding him is not that hard, as a parents we just need to be patience.
